Carrot Cake ----------- 4 large eggs 6 3/4 oz sugar 3 1/4 oz brown sugar (light or dark) 1 tbsp ground cinnamon 1/2 tsp ground nutmeg 2 tsp vanilla extract 3/4 cup oil 8 oz whole wheat flour 2 tsp baking soda 1 1/2 tsp baking powder 1 1/2 tsp salt 1/2 cup pineapple juice or rum 15 oz finely grated carrots 8 oz well-drained, chopped pineapple (from one 20 oz can) 5 oz shredded coconut Beat the eggs, sugars, cinnamon, and nutmeg until thick and pale. Add the vanilla, then dribble in the oil while beating. Combine the flour, baking soda, baking powder, and salt. Mix into the batter alternately with the liquid. Stir in the carrots, pineapple, and coconut. Pour the batter into a greased 13"x9" pan (or several smaller pans), and bake at 350 deg F until a toothpick inserted in the middle comes out clean, around 45 -- 55 minutes (for the 13"x9" pan). Cool. Cream cheese frosting --------------------- 3 oz butter 8 oz cream cheese 1 tsp vanilla extract 1 lb confectioner's sugar milk Beat the butter, cream cheese, and vanilla until light and fluffy. Mix in the confectioner's sugar, and then add enough milk to make a spreadable consistency.
